Whisk the marinade and add the chicken in the morning, then refrigerate so it's ready to hit the grill at dinner.
Directions
Mix the marinade In a large bowl, whisk together ¼ cup fresh lemon juice, ¼ cup olive oil, 1 tbsp jarred minced garlic, ¼ cup fresh parsley, 2 tbsp fresh oregano, 1 tsp lemon zest, 1½ tsp kosher salt, and ½ tsp black pepper until combined.
Marinate the chicken Add 2 lb boneless skinless chicken thighs to the bowl and turn to coat well. Let marinate at least 20 minutes at room temperature, or cover and refrigerate up to 8 hours.
Heat the grill Heat a grill to medium-high (about 450°F) and oil the grates. Let the chicken sit out while the grill heats if it was refrigerated.
Grill until charred Grill 2 lb boneless skinless chicken thighs, turning once, until charred and cooked through, about 5–7 minutes per side, or until an instant-read thermometer reads 175°F at the thickest part.
Rest and serve Transfer to a plate, tent loosely with foil, and rest 5 minutes before serving. Taste a piece and add a pinch more salt if needed.
