Directions
Prep and chill the melon Cut enough watermelon into 1-inch cubes to make 6 cups seedless watermelon. Keep it in the fridge until just before serving so it goes onto the plate cold and crisp.
Soak the onion Thinly slice ¼ red onion and drop the slices into a bowl of cold water while you prep everything else. This softens their sharp bite so they stay bright but mellow; drain well before adding.
Toss the salad In a large bowl, gently combine the 6 cups watermelon, drained ¼ red onion, and juice of 1 lime. Rub 1 tbsp dried mint between your fingers as you add it to wake up the flavor. Drizzle with 1 tbsp extra-virgin olive oil if using, then fold together lightly so the melon doesn't break down.
Crumble, season, and serve Scatter 4 oz feta cheese over the top and give one more gentle toss. Season with flaky sea salt and black pepper to taste — remember the feta is salty, so add salt sparingly and adjust after tasting. Serve immediately while cold.
