Greek Chicken & Rice Bowls with Grilled Zucchini and Lemon Drizzle

Pre-marinated Greek chicken and charred zucchini tossed with fluffy rice-maker rice, fresh cherry tomatoes, and a lemon–olive oil drizzle. A fast, low-cleanup weeknight bowl that's easy to portion down for a toddler.

  • 1.5 cups long-grain white rice — rinsed
  • 1.75 cups water — or per rice maker line
  • 1.25 lb pre-marinated Greek chicken
  • 1 zucchini — sliced into 1/2-inch planks
  • 1 cup cherry tomatoes — halved
  • 4 tbsp extra-virgin olive oil — divided
  • 1 lemon — half juiced, half in wedges
  • 0.5 tsp dried oregano
  • salt
  • black pepper

Directions

  1. Start the rice Rinse and add 1.5 cups long-grain white rice to your rice maker with 1.75 cups water. Start the white-rice setting so it's ready when the chicken and zucchini come off the grill.

  2. Prep and season Heat a grill or grill pan to medium-high. Brush 1 zucchini, cut into 1/2-inch planks, with about half of 4 tbsp extra-virgin olive oil and season with salt and black pepper. Pat 1.25 lb pre-marinated Greek chicken dry.

  3. Grill chicken and zucchini Grill 1.25 lb pre-marinated Greek chicken and the 1 zucchini together. Cook the chicken 5–7 minutes per side until charred and cooked through (internal temp 165°F), then rest 5 minutes. Grill the zucchini 3–4 minutes per side until tender and grill-marked, pulling it off as it's done. Slice the chicken into bite-size pieces and chop the zucchini.

  4. Make the lemon drizzle In a small bowl, whisk the remaining 4 tbsp extra-virgin olive oil with the juice from half of 1 lemon and 0.5 tsp dried oregano. Season with salt and black pepper to taste.

  5. Toss and serve Fluff the rice into a large bowl and add the sliced chicken, chopped zucchini, and 1 cup cherry tomatoes, halved. Pour over the lemon–olive oil drizzle and toss until everything is combined and coated. Serve with the remaining 1 lemon cut into wedges. For the toddler, scoop out a portion and go light on the drizzle.
